I am doing a summer assignment for AP Literature.?

Hard to tell, since I don't know what kind of books you like, but I expect that most people would enjoy the story of "The Hunchback of Notre Dame" the most out of those three. "Invisible Man," while an amazing book, is very heavy on social commentary and bizarre abstract imagery. I will admit I have not read "Great Expectations".
